1 1/2 cups all-purpose flour 3 1/2 teaspoons baking powder 1 teaspoon salt 1 1/4 cup whole milk 1 egg 3 tablespoons unsalted butter, melted Optional: 1 teaspoon vanilla extract
Microwave the butter for 30 seconds, then set aside.
Combine flour, sugar, salt, and baking powder in a medium mixing basin.
Combine the milk and the egg in a mixing bowl.
In the center of the flour mixture, make a well.
Fill the well with the butter, vanilla, and milk mixture.
Mix everything together with a whisk until it’s completely blended. It’ll be a little thick and lumpy, but it should blend in nicely.
Warm a lightly oiled skillet or griddle over medium-high heat while the dough rests.
Pour or scoop about 1/4 cup of batter onto the griddle for each pancake.
Cook for 3-6 minutes on each side, or until lightly browned.
